Zucchini Oven Fries

These baked zucchini sticks get a light, crisp coating from whipped egg white and seasoned flour. They're a fun way to work through a big batch of summer zucchini.
Serves 4 to 6
Ingredients
- 5 zucchini
- 1 egg white
- ⅔ cup all-purpose flour
- 1 tablespoon cornstarch
- ½ teaspoon salt
- ½ teaspoon garlic powder
- Cooking spray
Instructions
- Heat the oven to 400°F and lightly coat a baking sheet with cooking spray.
- Trim the zucchini, halve them lengthwise and cut into sticks about ¼ inch wide, like french fries.
- Whip the egg white with an electric mixer until it holds soft peaks. Add the zucchini and toss until evenly coated.
- Shake the flour, cornstarch, salt and garlic powder together in a paper bag until well mixed.
- Drop in the zucchini sticks about 5 at a time and shake gently to coat.
- Spread the sticks on the baking sheet and spray them well on all sides so the flour is moistened.
- Bake about 30 minutes, turning once, until golden brown.
