Strawberry Lassi

Lassi is a blended yogurt drink with roots in the Punjab region, and this strawberry version uses frozen berries in place of ice so it stays cold without getting watered down. It's a handy way to use up strawberries you froze at the height of the season.
Serves 4 · 10 minutes
Ingredients
- 2 cups plain whole-milk yogurt (South Asian dahi if you can find it)
- 2 to 3 tablespoons maple syrup, to taste
- ¼ to ½ teaspoon kosher salt
- Seeds from 4 green cardamom pods (or ⅛ teaspoon ground cardamom)
- 1½ cups (about 8 ounces) frozen whole strawberries
Instructions
- Crack open the cardamom pods with the flat side of a knife and pick out the seeds.
- Put the yogurt, maple syrup, salt, cardamom seeds and strawberries in a blender.
- Start blending on low and work up to high speed, running it until completely smooth.
- If it's thicker than you like, blend in water a tablespoon at a time.
- Pour into glasses and drink right away.
Tips
- Skip Greek yogurt and skyr here. They make the lassi too thick to sip.
