Bacon and Basil Wrapped Corn

Sweet corn and bacon are a classic pairing, and a few basil leaves tucked under the bacon add a fresh, summery note. Pick up corn and basil at the market in midsummer and fire up the grill.
Serves 8
Ingredients
- 8 medium ears fresh corn, husks removed (or pulled back and tied)
- 1 pound sliced bacon (regular, not thick-cut)
- Large fresh basil leaves
- Toothpicks
Instructions
- Heat a gas grill to medium-low, or set up a charcoal grill for indirect heat.
- Meanwhile, bring a very large pot of salted water to a boil. Add the corn, cover and cook for 4 minutes.
- Lift out the corn and let it sit for about 5 minutes, until it's cool enough to handle.
- Wrap each cob in 2 to 4 slices of bacon, overlapping the slices slightly and slipping basil leaves underneath as you go. Pin the ends with toothpicks where needed.
- Grill the corn over medium-low or indirect heat, turning often, until the bacon is crisp, 3 to 5 minutes. Pull out the toothpicks and serve hot.
